Instant Chocolate Cake

The other day I was CRAVING chocolate. I needed it. Life was standing still. I was crampy, sad, and hungry, and there was really only one cure.

And of course- we were out. No chocolate bars. No chocolate chips, cookies, or even chocolate cereal. The only thing I really wanted and needed in that moment was absent. But then I remembered a recipe I'd seen in the April issue of Food Network Magazine for instant chocolate cake... and all you needed was cocoa powder! I thrashed through the ripped out pages wobbly stacked on the bakers rack until I found it. And then just like that- I was back in business!


Whisk 1/4 cup flour, 5 tablespoons sugar, 2 tablespoons cocoa powder, 1 egg, 3 tablespoons milk (I used heavy cream since I was out), 3 tablespoons vegetable oil, and a dash each of vanilla extract and salt in a large mug until smooth. Microwave until puffed, about 2 minutes. Sprinkle with more cocoa powder. I had some raspberries in the fridge so I threw a few of those on top too.

Seriously- a 2 minute chocolate cake- Amazing.

Meet Lindsay...

Today's beautiful featured bride is Lindsay. Lindsay and I started working together way back in October on her custom Josephine design. She liked the Josephine style but wanted something all ivory, and some turquoise blue in the center as well. Here's how it turned out...

A New Look at Yellowstone

If you ever go to Yellowstone, I highly recommend breaking the trip down into at least 2 days. When my sis was here last summer, I took her to see Old Faithful and some other popular spots- but most of the trip consisted of driving (Yellowstone is huge). So this time we skipped everything we'd seen before and focused on some new attractions.

The day before we went however, we stopped at Grand Teton National Park. Look how stylish she is next to me. There I am still covered in fleece and there she is looking all cute.

We even saw a moose. Note to tourists: If you want to see a moose go to the town of Moose... sounds self explanatory, but really- there are almost always moose there and it's right at the entrance to Teton National Park too.

I call them "moose- i". You know like octopi and cacti, and other plural words that end in "i". I realize the fault in my ways and that even octopi is under scrutiny- but I like it- I think it's catchy- and "moose- i" is just fun to say

And on to Yellowstone...

Mammoth Hot Springs: In the town of Mammoth, elk are allowed to roam freely. It's kind of crazy walking around and having elk everywhere. The hot springs shown here are just on the edge of town

While we were walking on the boardwalk, we saw this snake off to the side

My camera was having a difficult time focusing and then I realized why- the snake was coming for me! I quickly took the pic and hurried off

After leaving Mammoth we headed back down the other side of Yellowstone (Yellowstone is one big loop). We had to stop for about 15 minutes however due to some traffic (bison walking on the road) so I snapped this quick pic of my cute little sis

And then out the window of all the beautiful trees surrounding us

We soon made our way to Midway Geyser Basin

Just look at how blue this one pool is... kind of makes you feel like you're in the Caribbean

Grand Prismatic Spring: The hot steam here is crazy! There would be moments that we would have to stop walking because we couldn't see directly in front of us... we'd of course hold onto one another and giggle like little school girls

Two days after returning from Yellowstone, we went on our last adventure- white water rafting down the Snake River. The water is super high right now because of the snow melt and all the rain we've been having, which made it so much fun! I highly recommend doing some rafting if given the chance. Here we are on the bus on our way down... no make- up and ready for some waves

Homemade Blueberry Muffins

I tried out this recipe the day my sister left. She and my husband were both still asleep and I wanted to wake them up with the aroma of fresh baked goods. And since I had a bunch of fresh blueberries in the fridge, I figured this was the perfect recipe to make. Try it this weekend for your loved ones.

  • 2 cups of sifted all purpose flour
  • 3 teaspoons of double acting baking powder
  • 3 tablespoons of sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 3/4 cup of milk
  • 1 egg, well beaten
  • 1/2 cup of melted butter
  • 1 cup of blueberries

Sift the flour and measure 2 cups (Flour increases in bulk with sifting. About 1 3/4 cups of flour will measure 2 cups after sifting).

Combine the sifted powder with the baking powder, sugar, salt, and cinnamon.

Sift again

Combine the milk and beaten egg...

Mix with dry ingredients. Add the melted butter and blend thoroughly.

Fold in the blueberries.

Butter muffin tins and fill each one 2/3 full with batter.

Bake at 400 degrees for about 25 minutes or until brown and puffy and done through.

Once out of the oven, break, slather on some butter, sprinkle on cinnamon, and enjoy!

Meet Meghan Part 1

I seriously LOVE my job. I'm surrounded by pretty fabrics on a daily basis, I work from home, and I get to make hair fascinators for some of the sweetest and loveliest brides around! Just check out today's real wedding.

I created the Champagne Brunch for Meghan (and 2 smaller versions for her Maid & Matron of Honor). Her wedding is so incredibly gorgeous (and she sent me so many amazing photos!), that I had to split it up into 2 posts.
