To the Weekend!

This is the last weekend I'll spend in my house. It's so strange when you think of things in those terms. Makes you kind of sad- happy for the bigger & better to come, but also sad to be leaving something so familiar. Our duplex is small- very small, but it's the longest I've ever lived in one place permanently, and it's where Danny & I are got our start in Wyoming- so it will always hold a very special place in my heart.

So this weekend we'll continue packing. I'll finish up the remainder of my orders. And come Wednesday- we'll say goodbye to our little home.

Quinoa & Sweet Potato Chili

I don't know about you, but my Pinterest food board is insane... mostly filled with decadent & delicious goods that throw on calories just by reading the ingredients- but there are a few on there that are for the more healthy inclined- like this one- Quinoa & Sweet Potato Chili.

Super healthy, crazy filling (if it's just for two you may want to cut the ingredients in half), and really, really tasty. I made the chili for dinner one night and then used it as the filling for a burrito the next day for lunch... my husband & I have actually been eating it all the time and there's still a ton left! So like I said, you may want to cut the ingredients in half.

But I highly recommend making it. Perfect for those cold days when you want to warm up with something hearty, but not feel gross afterwards.

This recipe is from Milk Free Mom. I slightly changed some of the ingredients (but only because I didn't have everything from her original recipe on hand). Here's what I used:


29 oz of black beans, rinsed and drained (you can use canned but we used bagged... less sodium
6 oz can tomato paste
28 oz vegetable broth
1 onion, chopped
5 cloves garlic, minced
1 heaping teaspoon cayenne pepper
1 heaping teaspoon paprika
1 tablespoon cumin
1 teaspoon oregano
1 tablespoon olive oil
1 sweet potato, peeled and cut into bite sized chunks
1 cup dry quinoa
Salt and pepper to taste

Cooking Time!

Heat the oil in a large heavy soup pot over medium low heat. Add chopped onion and cook until soft and they start to turn brown (about 10 minutes). Add the garlic, and cook for about 2 minutes. Add the tomato paste, cayenne pepper, paprika, cumin, and oregano and cook for about 2 minutes, stirring constantly. Add the beans, broth, and potatoes, and season with salt and pepper . Cook for about 5 minutes, then add the quinoa. Continue cooking for about 15 minutes – 30 minutes (this was not enough time to cook my quinoa, so I put the lid on after 30 minutes, and cooked for another 30 minutes) stirring frequently, until quinoa and potatoes are cooked and the chili has thickened. Add a bit of water if the chili becomes too thick for your liking. Top with avocado and Enjoy!

ps- We made ours a little less healthy by accompanying the chili with a dollop of sour cream (so good!) and some snow chilled IPA's :)

Life as of Late...

Life has been so incredibly busy lately- but also really, really awesome.

For starters, I went on a...

The first spot we stopped at had a fresh kill and some very fresh bear tracks... we kept moving

Exploring out in the cool crisp air, while snacking on gourmet sandwiches and chocolates was heavenly. I love fall...

Last Friday, I made the trek out to Idaho to stock up on supplies before winter. The oncoming storm (I told ya!) on my way back made for some gorgeous scenery, so I stopped to take a photo...

This weekend, we packed, and packed, and then packed up some more... 
 Maverick was no help...

But it's going to all be worth it since we're moving into this adorable cabin in the woods come November!!

 And then finally, we woke up to the first snow of the season today! I love where I live...

To the Weekend!

It's that time of year again... Idaho Driving Time. This may be my last trip this year so I need to stock up on some supplies before we start getting snow. The beginning always starts out great. The 2 hours there I'm blaring my music, singing, day dreaming, and taking in the scenery. The 2 hours back... all I want to do is be home... and it ALWAYS rains on my way back... I don't know how I plan it... but it definitely makes looking out for deer that much harder. But I also love rain... Oh the complexities of life

Living with Purpose

Time passes so quickly. I can't believe that 3 years ago, I was so very unhappy, professionally speaking. I felt lost, unfulfilled, bitter, and caged. I hated my commute and I was becoming a very unflattering version of myself. They tell you that, " You're a grown up now-Welcome to the real world- This is life." But it's not. Life is living with purpose... with love. And only after I got the courage to step away and put in my notice, did I really start living that life.

Fast forward to today, and I couldn't be happier. I'm working harder and putting in more hours than I ever have in my entire life- but I feel so wonderfully fulfilled. I LOVE where I live. I LOVE what I do. And I am so fortunate that I married a man who was willing to take a leap of faith with me and move to where I felt called.

Of course there have been hiccups, hardships, and trials along the way, but there would have been on either road. And I'm so happy we chose this one.
